Spicy Chipotle Lasagna Recipe

A lower carb version chipotle recipes that packs a little punch by incorporating spiciness and different kinds of cheeses added – a yummy twist around the classic lasagna recipe.

Ingredients

1 lb lean ground beef

1 lb hot Italian sausage

1 white onion, chopped

1 pint fresh mushrooms, sliced

3 cloves garlic, crushed

1 chipotle chili in adobo sauce, chopped

1 can (6oz) tomato paste

2 cans (15oz) stewed tomatoes

Sea Salt, to taste

Ground pepper, to taste

1/2 cup fresh basil, chopped

1/4 cup fresh oregano, chopped

2 packages (8oz) cream cheese, room temperature

1 lb frozen chopped spinach, thawed

9 flat lasagna noodles

2 balls of fresh mozzarella (8oz each), sliced

2 zucchini, sliced lengthwise

1 cup Asiago cheese, grated

1 cup Parmesan cheese, grated

How to make:

Preheat oven to 400 degrees.

In a sizable pot or Saucepan over medium-high heat, cook the earth beef and Italian sausage until lightly browned. Drain.

Stir inside onion, mushrooms, and garlic with meat. Cook, continuously stirring, until the onion has turned translucent – about A few minutes. Add the chipotle chili, tomato paste, and stewed tomatoes then stir. Bring mix into a boil, then reduce heat to medium-low, and simmer for Quarter-hour. Season to taste with pepper and salt,

Stir in the basil and oregano; simmer A few minutes more then remove on the heat.

Meanwhile, mix the cream cheese and chopped spinach until blended in the medium bowl. Tip: Will not drain the spinach, the stream will help thin out your cream cheese into a sour cream-like consistency.

Line the bottom of a 913 inch baking dish using a sheet of aluminum foil, and spray with cooking spray.

Place 3 uncooked lasagna noodles on the bottom of the pan, spread using a third on the spinach mixture then, spread another of the meat sauce over it. Spread a layer of your third on the mozzarella and a third on the sliced zucchini. Sprinkle another of the Asiago cheese along with a third on the Parmesan cheeses number one. Repeat most of these layers two more times.

Cover the baking dish with aluminum foil, and bake in oven for 40 minutes. Remove from oven, remove aluminum foil and get back to oven to remain baking for around 15 to 20 minutes or until the top is bubbly and golden brown.
